Friday, May 9. 2008Cooking up a storm![]() Since the start of the year, I’ve been a kitchen mainstay. I’ve made all sorts of pasta dishes—meatballs, Bolognese, prawns in cream sauce, anchovies and mozzarella—in addition to beef burgers, spicy prawns, honey-glazed chicken wings, and other ulam, cooking them according to my taste and not to a prescribed recipe (partly because I have a strong opinion about how I want my food to taste, but mostly because my pantry’s usually one or two ingredients short of the established recipe). I’m quite proud of the results, so much so that I often crave my own creations. The one dish, however, that I’d love to be able to cook is callos. Last Christmas, I had one of the best callos I’ve ever tasted, prepared by my mom’s friend. My dad, who is a great cook, loved it. I equally adore the version made by Sonya Garcia (owner of Sonya's Garden), which was inspired by a recipe of her mom’s that Sonya improved on and, I must say, perfected. Also impressive is the version of my friend Binky’s mom, which she brought to the office one afternoon for me to try. Callos is not the sort of dish you can improvise on to start so I scoured the web for a recipe and found two that were interesting—one by Market Man and another by Pinoy Cook. I shared them with my dad who tested them in the kitchen one weekend. Preparing it took all his commitment. The tripe and pata had to putter softly over the stove for hours until they were meltingly divine. But the result was worth it. The callos came out superb. My dad was so proud of it that now he lives in constant anticipation of family gatherings where he can showcase (show off) his new “specialty.” Just recently, I read a review of Angel’s Kitchen on Spot.ph. The five star user rating piqued my interest, and since its location in Connecticut St. Greenhills was quite near where I live, I decided to drop by and take out dinner that I can enjoy while watching Silk on DVD. The mandarin chicken and the dory dish were recommended but I was distracted by the callos. I just had to order it. It was a great choice, very flavorful and tender, although I felt it would be even better after a night on the fridge and a slow simmer the following morning. If only I had leftovers. Maybe one of these days I’ll get over my intimidation of cooking callos and prepare it myself. Maybe then I’d also be able to cook kare-kare, another dish that I’m just too scared to whip up. For now, I’ll have to settle for the restaurant variety, and that’s not bad at all. Trackbacks

It looks delicious, but the thought of eating ox or beef tripe makes me shiver. :-(
Darlene could be a little bit of a vegetarian, hope she is not a vegan.
I'm not a vegan, I also eat meat like chicken, pork & beef, except only the "lamang loob" part. I have a hard time eating dishes with lamang loob, I don't know why. One dish that I havn't tried also and will not attempt to try is the Lengua Estofada (w/ox tongue as the main ingredient) For me, it's like eating a live cow. mooooh :-)

i hope na buo ang mga ipin mo at di denture lang,,naisip ko lang kung bakit kasi matigas at makunat delikado nga sa denture.

Hi Nancy I don't have dentures, It's just that I'm quite particular with the food I eat. I am more of vegie person, but I also eat meat except the lamang loob part. I get goose bumps everytime I attempt to eat so I might as well not eat it.
I hope your husband is okay now with his new dentures.

I am not much of a squeamish person, I ate almost anything as long as it is delicious clean and harmless. Like Dinuguang internal parts, Pinapaitang kambing with a little bit goat's poop? that is so gross, balut in chick's embryo, chicharon bulaklak. sisig a crunchy pig's ear, snout and brain are the best with beer.

Jojo,i´ve seen some docus of chinese people endures the poverty they suffered at,those who has to works likes robots(slave laborers)they are the ones making all those products we bought from them,they are the one who hardly eat twice a day.
I think where you lived at,is the residence of prominent chineses,they are rich and can afford the luxuries of first world citizens.Theres is abundance of foods because that is where all the blessings goes at. But tried visit other areas,i am sures you will see some of them suffer as much as those filipino live in payatas. Not everything that glitters is gold.

Pls don't deny me my knowledge about this place, been here 15 yrs, fact almost 16 yrs in China. Been to 68 different cities here, mostly small 'remote' cities. mas marami pa ang narating kong lugar dito kesa sa atin, kakahiya di ba? I seldom have the luxury of staying in big cities like Beijing, Shanghai, Canton and others. Most of the time I stay in cities purported by foreign medias as poor cities. Cities where there are no McDo's, KFC fastfoods or what have you in western or european nations. Believe me their "poor people" are far better off than our poor countrymen. Foreign medias have the tendency to "exaggerate" what these people are. What you probably saw is one of those biased-against-china documentaries, one that gives china a negative image. sad to say and i am sorry, you believed in them when actually you are outside and merely looking inside of China, well part of it anyway. And I am inside and have seen them progress by leaps and bounds over a decade. I am not pro chinese, I am a full blooded pinoy still hoping our country will get out of the hole we are in, but if you were in my position, you can't help but be amazed by what they gained in economy. and wish our own beloved country can be half as successful as they are. while the docus you have seen may be true, they could be a picture of real out of the map location here. and pls be reminded, documentaries can be made, edited, to satisfy one's intention of projecting an image of a culture. Just like filipinos,majority of chinese are poor and hardly lived a decent living or a life with a quality.Too much populations is what makes its country becomes vulnerable to poverty,injustice,criminality.I´d have seen the docus about Brazil,Columbia,India,Africa etc.many suffered of malnutritions,homelessness and all kinds of violence...and yes it has the same pictures of what Philippines looklikes as well.A Beautiful country but infected of poverty and crimes,only few people live a better life. Talking about pollutions,even here in the country i lived at,the air quality is also geting worst due of many smokes produces by vehicles,motorbikes,factories the only thing still works,the people here are still much more disciplined compares to other race and the gov´t still managed to control the growing populations,the garbbages problem but for how long only time can tell. Well i think where ever part of the world there is poverty exist even in a first world countries...there is poor people exist. I´d just hope the wholeworld will stop using too much of its fossil oil for useless thing to reduce the pollutions it contributes to this planet earth.In this country Sunday six wheeler or longwagons are no longer allowed to travel around the highways or streets to minimized the pollutions it contributes. Sa Taiwan sarap ng Shabo-shabo... Sa Korea sarap ng Kimchi... Sa Japan naman Sushi... Sa Arab land sarap ng Shwarma, Kabsa, Patatim, Falafil, Laham... Pero sa Pinas kahit anung menu msarap...Basta kain kang naka-taas ang paa sa bangkito, subong naka-kamay, kuha ng ulam sa ibabaw ng dahong-saging may pigang kamatis, punas ng kaliwang palad sa pawisang noo then ipahid sa shirt... OH, SAAN KA PA??? |
